Pam Brook

Pam is passionate about nutritional balance, regenerative farming and ‘real food made right’. She loves sharing and creating meals with family and friends.

Pam is co-founder of Brookfarm, a family food business based in Byron Bay, which she established with her husband, Martin Brook, on their macadamia farm in 1999. All their recipes began in Pam’s kitchen. She believes it’s not enough for food to be healthy — it has to taste delicious, especially if you want your kids to eat it.

Sarah is passionate about provenance and through her recipes she brings out the true flavours of real ingredients. The art in her cooking is using simplicity to create fabulous, healthy, delicious, fuss-free food.

One of Australia’s great cooks and with more than 30 years experience, Sarah’s background stretches from The Bayswater Brasserie, The Bather’s Pavilion & Rockpool in Sydney to her own 100 Mile Table in Byron Bay. Sarah now owns and runs Bay Grocer in the heart of Byron where her focus remains on quality ingredients and in supporting local producers, creators and brands

Sam Gowing

Before nutrition became trendy, before kale became the superfood superstar, and before the green juice Instagram selfie was ever a thing, there was Sam Gowing, spreading the word on healthy cuisine and all that it encompasses for more than 20 years.

Sam has established herself as one of Australia’s leading nutritional chefs working with leading resorts and spas worldwide. She is a former chef-hat award winning restaurateur and hotelier, who retrained as a clinical nutritionist and more recently, completed a master’s degree with Le Cordon Bleu.
